We called ahead to the AOK (used to be a KOA) Camper Park in Amarillo, Texas and he said to come and pick a spot and when we leave in the morning, put the money in the slot at the office door! Hey, as long as there are full hookups (meaning sewer as well as electric and water) and no terrible TripAdvisor reviews I'm happy.
We are eating pretty healthy on our RV trip. It's pretty much like we eat at home: most mornings we blend a green smoothie and supplement it with Ezekiel toast and peanut butter or a bowl of cereal.
We pack raw nuts/raisins and fruit for a snack on the road then about half the time a green salad for lunch. Walmart now has a decent amount of organic produce.
We have a little oven under the stove so for supper we will heat up the taco casserole we had made that can last for 2 or 3 meals or heat up a frozen burrito, and steam a veggie sometimes. Or go out to eat.
There were more mountains until after Albuquerque, NM, then we passed something like 40 miles of wind turbines going into Amarillo. I'll have to look that up to see how many there are. Could be up to 3 or 4000!! And Vernon said that the ONE wind turbine that is in Lewes Delaware can power up to 500 homes.

We stayed at a couple campgrounds like the one you're describing- the one in Texas was like a parking lot. It worked.
We went by Gallup and thought of you two. Vernon said that's where you bought your truck!
